Like many people, I find cooked liver harder to eat that most other cuts. This receipe is much easier for me to swallow. 🙂
Raw liver, frozen or defrosted (about 1/2 cup)
chunk of raw ginger (about half thumb length)
splash of apple cider vinegar
10-20 fresh mint leaves (this is key, though other flavors might work well too)
1/4 cup mixed greens & herbs (example: spinach, wild greens, asparagus, oregano, terragon etc)
1/8th tsp celtic or himalayan salt
1/4 cup (or less) strawberries or other fruit
1/4 cup (or less kefir
water as need (usually about 1/2 cup)
Blend in vitamix until smooth.
Result is a thick, creamy, dark smoothie that looks chocolaty and tastes minty. The liver taste is there, but not strong.
