Chocolate Chip Biscotti

spring2016-040This recipe makes round gluten-free “biscotti.” Ok, they’re not “real” biscotti, but they’re almondy and not too sweet and great to dunk in fresh milk or tea!

Preheat oven to 375 degrees.

Mix together:
1 1/2 cups all purpose gluten free flour
3/4 cup almond butter
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 egg
1/3 cup maple syrup
1/2 tablespoon vanilla extract
1/3 cups semi-sweet chocolate morsels or sliced up dark chocolate bar

These do not spread much, so you can probably fit about 30 full spoon-sized balls onto one large cookie sheet.

Cook for about 12 minutes, until they get a tiny bit browned.

And no, we do not recommend feeding any to your dog — chocolate is not good for dogs.
