This is very fast and easy to make — no baking! And it is gluten free and vegan. Though it does have chocolate chips which include sugar.
Filling:
1 box soft tofu
1 can coconut milk
2 cups chocolate chips
Crust
3/4 cup dates (pitted)
1/4 cup figs
1/4 cup coconut flakes
1/3 cup chocolate chips
Instructions:
Soak dates and figs for 15-30 minutes in warm water.
Use cuisinart to grind together all crust ingredients until substance holds together (rather like cookie dough).
Spread out in pie dish and press flat.
Use double boiler to melt chocolote chips. Place tofu and coconut milk in blender and blend. Add melted chocolate chips. Pour onto crust in pie pan.
Place in freezer or fridge until firm. Enjoy!
