Chocolate Macaroons — Vegan, Gluten-Free & Raw!
2 cups unsweetened shredded coconut, plus more to roll them in
½ cup coconut oil
½ cup plus 2 tablespoons unsweetened natural cocoa powder
¼ cup honey
1 teaspoon pure vanilla extract
Pinch of salt
Blend all the ingredients in a food processor, mixing them in one at a time, in order.
Roll the mixture into 1-to 2-inch balls, roll the balls around in some more shredded coconut, and refrigerate or freeze them until firm to the touch.
Serve cold but not frozen.
You can also add flavors such as orange zest or cinnamon.
